Cream Cheese Frosting

Ingredients
1 block cream cheese, very soft
1 1/2 sticks butter, very soft
1/2 T lemon juice
1/2 t vanilla
1 lb powder sugar

Preparation
Mix cream cheese & butter until creamy. Add lemon juice & vanilla. Slowly add powder sugar and mix for 3 minutes to make fluffy. Refridgerate 30 minutes before using.

Pizza Dough

Ingredients
2 1/4 tsp fast rising yeast
1 tsp brown sugar
1 1/2 cups warm water
1 tsp salt
2 tbsp olive oil
1 1/2 tsp Italian seasoning
3 1/2 - 4 cups flour

Preparation
In bowl, dissolve sugar and yeast in water. Let sit for 10 minutes. Stir salt, oil and Italian seasoning in yeast. Mix 2 1/2 cups flour. Turn dough out on clean, dry surface and knead in more flour until dough is no longer sticky. (I use my knead paddle on my kitchen aid) Place dough in a well oiled bowl and cover with a cloth. Heat oven to 175 degrees and shut off. Place dough in oven for 30-45 minutes or until dough is doubled. Punch down and let rest for a minute. Roll out (flatter than you think, it bakes up pretty big) and place on pizza pan or stone sprinkled with corn meal. Bake for 5-10 minutes at 425 degrees. Top with sauce, cheese and favorite toppings. Bake for an additional 10-15 minutes or until cheese and crust are golden brown.
*Also makes great breadsticks!
Yield: about 2 large pizzas

Easy Beef Stew

Ingredients
1 can diced tomatoes
1 beef bouillon cube
1 packet onion soup mix
4-5 medium red potatoes, large diced
5-6 carrots, sliced thick
1/2 - 1 lb beef stew meat
2-4 tblsp cornstarch

Preparation
In crock pot, combine all ingredients and 2 cans full of hot water. Mix well. Cook on high for 5-6 hours. Combine cornstarch with a few tablespoons cold water. Slowly add to stew until desired thickness. Season with salt, pepper and butter (to make flavor more rich.)

Chicken Tacos

Ingredients
2 chicken breasts
1 cup water
1 chicken bouillon cube
1 bay leaf
1 clove garlic, minced
1 4 oz can diced green chilies
2 tblsp sour cream
1 tsp garlic salt
1/4 tsp oregano
1/4 tsp cumin
1/2 tsp chili powder (decrease to 1/4 tsp for a more mild flavor)
1 tsp lemon or lime juice

Preparation
In a small saucepan, boil water, bouillon, bay leaf, garlic and chicken breasts until cooked. DO NOT add more water! Remove from heat, bay leaf and chicken. Shred chicken and add back to water. Add remaining ingredients and mix well. Serve with warm tortillas, salsa and extra sour cream (if desired).

Alfredo Sauce

Ingredients
7 tblsp butter
2 cloves garlic, minced
2 cups half & half
1/4 tsp white pepper (I always use black because of the cost of white pepper)
1 tblsp sour cream
1/2 cup grated parmesan cheese
1 cup grated mozzarella cheese
salt to taste

Preparation
Melt butter in saucepan. Add garlic, half & half, pepper and sour cream and simmer. Add parmesan cheese and simmer for about 10 minutes, until sauce has thickened. Add mozzarella and stir until smooth. Great on pasta, as dip or pizza sauce. As all alfredo, it doesn't reheat well, but still tastes good!
*You can use heavy cream if the calories and fat don't matter, but the half & half tastes just as good!

French Toast Casserole

Ingredients
1 loaf french bread, cut in half lengthwise
1/2 block cream cheese, very soft
9 eggs
2 cups milk
1/2 cup + 3 T brown sugar
1/4 tsp maple flavoring
1/2 tsp nutmeg
1 tsp cinnamon
powdered sugar

Preparation
In a mixing bowl, combine cream cheese, 3 T brown sugar, 1/4 tsp nutmeg and 1/4 tsp cinnamon. Spread on one side of bread and top with second slice. Cut loaf into 1 inch cubes. Place in well greased 11x13 inch pan. In a separate bowl, whisk eggs, milk, 1/2 cup brown sugar, 1/4 tsp maple flavoring, 1/4 tsp nutmeg, and 3/4 tsp cinnamon. Pour over bread, cover and refrigerate overnight (or at least for 2 hours)
Preheat oven to 350 F and bake for 45-60 minutes til brown and crunchy on top. Sprinkle with powdered sugar and serve warm with syrup.
Variation: Top with pecans for last 5 minutes of baking.

Turkey Roll-Ups

Ingredients
4 tortillas (I like whole wheat)
3-4 tablespoons cream cheese
1/2 cup chunky salsa
12 slices of deli turkey
1/2 cup shred cheddar cheese
4 leaves of lettuce

Preparation
Spread cream cheese, then salsa on tortillas. Sprinkle on cheese. Add 2-3 slices of turkey and a leaf of lettuce. Roll up and cut in half.

Creamy Chicken Stew

Ingredients
1 can cream of chicken soup
1/4 cup Kraft Zesty Italian dressing (I use fat free)
1 cup frozen corn
1 cup frozen carrots
2 stalks celery, chopped
2-3 medium potatoes, cubed (I like using red potatoes so I don't have to peel them)
2 chicken breasts, cubed
1 1/2 cups milk
3 tablespoons parmesan cheese

Preparation
In microwavable bowl, add 3 tablespoons water and potatoes. Cover and microwave on high for about 7 minutes. Cook chicken in large sauce pan. Add soup, dressing, corn, carrots, celery and milk. Cook on medium heat for 5-7 minutes or until veggies are beginning to soften, stirring frequently. Add potatoes and cheese, cook for an additional 5 minutes or until veggies are to desired softness. Salt and pepper to taste and serve.

Awesome Honey Granola

Ingredients
4 c old fashioned rolled oats
1 c raisins or other dried fruit
2 c nuts (chop if you want, fine chop for kids that don't really like them)
1/2 c butter
1 t vanilla
3/4 c honey
2 t cinnamon
dash salt

Preparation
Combine oats, nuts and fruit in a large bowl and set aside. Combine honey, butter, cinnamon, vanilla and salt in a sauce pan and bring to a boil for 1 min. Pour mixture over oats and mix well. Spread on cookie sheet lined with parchment. Bake 350 for 20 min or until lightly browned, stirring every 5 min. Cool, crumble and store at room temperature in an airtight container.

Mummy Bagel Pizza

Ingredients
Bagels, cut in half
String Cheese, about one per half
Pizza Sauce
Olives, sliced

Preparation
Preheat oven to 400. Spoon pizza sauce over bagel halves. Pull apart cheese and place on bagel to look like bandages. Add 2 slices of olives to look like eyes. Place on ungreased cookie sheet and bake 5-10 minutes or until heated through and cheese is melted.
