Ingredients
1 small bag frozen corn, thawed and drained
1 red bell pepper
1 can chicken broth
2 medium red potatoes
1 can evaporated milk
salt and pepper to taste
Preparation
Peel and small dice potatoes. Chop bell pepper to desired size. In small skillet, saute corn and pepper. Mix all ingredients, except milk, in crock pot. Cook on high 2-4 hours or low 5-7 hours or until potatoes are soft. 30 minutes prior to serving, add milk. Blend well. Salt and pepper to taste.
